Made from only one type of olive, the famous Koroneiki olive of Greece.  The Koroneiki olive can be found all over Greece and is now cultivated in many areas outside its country of origin due to its highly desirable traits.  This olive variety is also known to have some of the highest levels of polyphenols in comparison to other olive varieties.  Bold and peppery in flavor with strong green vegetal notes.
